With the wild Irish salmon season almost upon us, Chef Joe Flaherty cooks this wonderful, versatile fish 3 different ways. Originally from Renvyle in Connemara, Joe started his career as a chef in Renvyle House Hotel. Being at the time in a remote part of Ireland, seasonal local ingredients from sea, mountain, lake and garden were the staples of the menu. As Joe says “Little did I know then that this would become so fashionable”. He currently lives in Galway city and is chef in John Keoghs Gastropub in the city.
